If you love food, meal planning, and exploring new flavors, you’re in the right place. As someone who practices One Meal a Day (OMAD) intermittent fasting, I focus on creating meals that are satisfying, full of variety, and something to look forward to every day. This week’s meal plan is filled with comforting dishes, perfect for snowy Michigan weather, and it makes great use of leftover ingredients from the holidays (hello, cheese!). Let’s dive in!
This Week’s Meals (SHOP WITH ME HERE!)
Monday:
Naan Pizza
There’s no recipe needed for this one! Simply top naan bread with your favorite pizza sauce, add toppings of choice, sprinkle on shredded cheese, and bake at 350°F until golden brown.
This is a favorite of my son’s. He goes cheese only.
My girls prefer green olives, sliced.
Me? Really it depends on what’s in the fridge. I’ll use leftover meats, veggies and jarred items (such as artichokes 🤤 ).
Tuesday & Wednesday:
Birria Beef Tacos with Corn and Black Bean Salsa
For a flavorful weekend feast:
- Birria Beef: Cook ALDI Birria Roast in the crockpot on low with 4 cups of beef broth, 1 chopped onion, minced garlic (I add lots!), and an entire can of chipotle peppers. Cook all day, then shred the beef.
- Tacos: Dip corn tortillas in the broth, cook on a warm oiled skillet, and fill with shredded beef, cheese, cilantro, and onion. Fold and fry on both sides. Serve with consommé for dipping.
- Corn and Black Bean Salsa: A fresh and vibrant side that pairs perfectly with the tacos.
I make enough to enjoy two nights in a row!
Thursday:
Spaghetti Aglio e Olio
A simple, flavorful pasta dish that’s perfect for cold nights. You can find the recipe I use here. Matt is actually the one wanting to make this for dinner. He’s also steaming green beans, and having sliced bread with butter and cheese.
Friday:
Beer Cheese Soup and Pretzels
Cozy up with a warm bowl of beer cheese soup (recipe here) and serve it alongside pretzels (from ALDI’s frozen section). Homemade pretzels are amazing too, if you feel like going the extra mile!
Saturday:
Leftovers
A relaxing day to enjoy anything left from earlier in the week.
Sunday:
BBQ Chicken with Tini’s Mac n Cheese
This pairing makes for an extra comforting midweek meal! Elsie originally saw this mac n cheese on YouTube shorts. It went viral for a reason – it’s SO good!
- Tini’s Mac n Cheese: Follow the recipe from this YouTube video for creamy, cheesy perfection.
- BBQ Chicken: Mix leftover rotisserie chicken with BBQ sauce, heat it up, and enjoy. Personally, I like to add my chicken right into the man and cheese with green onion! I am so looking forward to it! 🎉
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most of my groceries, but I also shop at Wal-Mart, Costco, Trader Joe’s, and occasionally use subscription food companies to mix things up. The variety helps keep my meals exciting and fresh.
