Welcome back to my weekly meal plan roundup! If you love food, meal planning, and exploring new flavors, you’re in the right place. As someone who practices One Meal a Day (OMAD) intermittent fasting, I focus on creating meals that are satisfying, full of variety, and something to look forward to every day. This week’s meal plan is filled with delicious options that I’m excited to share with you!
This Week’s Meals
Here’s a sneak peek at what’s on the menu this week:
Monday:
- Main Dish: Homemade Spaghetti-Os (recipe link)
- Side: Grilled Cheese
- Vegetable: Roasted Cauliflower (recipe link)
Tuesday:
- Main Dish: Homemade Jimmy John’s Subs (buy day-old bread from Jimmy John’s and load it up with your favorite fillings!)
- Sides: Chips with sour cream and soup mix dip, plus crisp apple slices for a touch of sweetness
Wednesday:
- Main Dish: Creamy Alfredo (recipe link) with air-fried chicken
- Sides: Warm Rhodes rolls and a fresh green salad
Thursday:
- Main Dish: Vegetable Soup
- Recipe: Combine frozen California blend veggies, mixed veggies, canned sliced potatoes, diced tomatoes, beef stock, tomato juice, and seasonings (full guide included below). Slow cook for 7-9 hours for an easy, comforting meal.
Friday:
- Event: Out to eat at Olive Garden to celebrate my daughter Mila’s 15th birthday – her favorite spot for endless soup, salad, and breadsticks!
Saturday:
- Event: Going to my in-laws’ house for another celebration of Mila’s birthday. I’m taking along a dessert and some homemade chip dip for snacking.
Sunday:
- Main Dish: DIY Crunchwraps (guide link)
- Beverage: Strawberry Lemonade Slushies – a fun, refreshing way to end the week
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most of my groceries, but I also shop at Wal-Mart, Costco, Trader Joe’s, and occasionally use subscription food companies to mix things up. This Week’s Details
It’s a busy week with three basketball games, two birthdays in the house, and freezing temperatures (it feels like it’s below zero all day!). Warm and comforting meals are definitely the priority.
Celebrations: My oldest daughter Mila turns 15 this week, and we’re also celebrating our dog Emmie’s 2nd birthday. It’s a special, festive time, and we’re making it extra fun with these meal ideas.
Pro Tip: Prepare the vegetable soup and crusty bread the night before a busy day to simplify your routine and keep mealtime stress-free.
Vegetable Soup Guide
Ingredients:
- 32 oz frozen California blend
- 1 bag frozen mixed veggies
- 2 cans drained sliced potatoes
- 28 oz can diced tomatoes
- 1 carton beef stock (or vegetable stock for a vegetarian option)
- 2 cans tomato juice
- 1 tbsp Italian seasoning
- 1 tsp salt (adjust to taste)
- 2 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp minced onion
Instructions: Combine all ingredients in a slow cooker and let it cook on low for 7-9 hours. This soup is easy to prepare the night before and set in the morning. Pair with crusty bread for a comforting, hearty meal.
