Welcome back to my weekly meal plan roundup! This week marks the final stretch of basketball season for my daughter, meaning our evenings are a little less hectic—at least until track starts! I’m also looking forward to celebrating my foodie sister, Libby, with some delicious eats during Downtown Kalamazoo Restaurant Week.
While I won’t be joining my family for dinner on Monday since it’s a down day for me, I’ve still planned out some delicious, satisfying meals for the rest of the week. Let’s dive into what’s on the menu!
This Week’s Meals
Monday: Taco Night! 🌮
Even though I won’t be eating dinner tonight, my family will be enjoying a classic favorite—tacos! I always make taco meat in bulk (watch how I prep it here). To go with it, I’m making queso using half a block of Clancy’s white cheese and a can of Casa Mamita Rotel dupe, plus Spanish rice to round out the meal.
Tuesday: Tomato Soup & Grilled Cheese 🍞🧀
Nothing beats the combo of a warm bowl of homemade tomato soup and a crispy grilled cheese sandwich. I’ll be making my grilled cheese panini-style with mayo, avocado, havarti cheese, buffalo chicken, all on Everything Sourdough bread.
Wednesday: Breakfast for Dinner 🥓🍳
A favorite in our house! We’ll be having crispy bacon, eggs cooked to preference, breakfast potatoes, and some homemade applesauce.
Thursday: Steak & Gnocchi Night 🥩🍽
This meal is going to be indulgent and comforting! I’ll be making crispy fried gnocchi, flavorful steak bites, creamy alfredo sauce, and roasted asparagus on the side.
Friday: Pizza Night 🍕🥗
It’s a classic Friday tradition—carry-out pizza with fresh salads at home. My salad will be loaded with radishes, artichokes, beets, cheese, and all the fresh veggies I can find!
Saturday: Sister’s Birthday Dinner Out 🎉
I’m so excited to celebrate my sister Libby’s birthday while exploring Downtown Kalamazoo Restaurant Week! This will be a fun foodie adventure, and I can’t wait to share more about what we try.
Sunday: Leftover Night 🍽
After a busy weekend, it’s a perfect night to enjoy some leftovers. I’m thinking it’ll be a mix of pizza, tomato soup, and grilled cheese—an easy and delicious way to wrap up the week.
Where I Shop
My weekly grocery haul starts with my Monday ALDI trip, where I stock up on staples and seasonal finds at budget-friendly prices. I also make stops at Walmart, Costco, and Trader Joe’s to keep things interesting and find specialty items.
