Welcome back to another weekly meal plan! This week, I challenged myself to spend less than $50 on groceries, with each family member getting to pick just one item while the rest of our meals come from what we already have in our fridge, pantry, and freezer. I love doing this because it helps reduce waste, saves money, and ensures we’re using what we’ve already purchased.

This Week’s Meals
Here’s what’s on the menu this week:
Monday: Fend for Yourself Night
Everyone picks and makes what they want! I’ll help my 8-year-old, but options include mac and cheese, Spaghettios, cereal, salad, grilled cheese, avocado toast, and more. A low-effort way to kick off the week!
Tuesday: Breakfast for Dinner
- Frozen pancakes
- Homemade fruit sauce (Recipe Inspiration)
- French toast sticks
- Tots and sausage patties
Wednesday: Spicy Rigatoni Night
- Spicy Rigatoni
- Italian bread
Thursday: Jimmy John’s at Home
- Deli-style sandwiches with favorite fixings
- Chips, dip, and apples
Friday: Naan Bread Pizza & Salad Bar
- Top naan with sauce, cheese, and favorite toppings, then bake at 350°F until melty and delicious!
- DIY salad bar with a variety of toppings
Saturday: Tacos, Enchiladas & Dips
- No specific recipes this time, just assembling a delicious Tex-Mex feast from what’s on hand!
Sunday: Freezer Frenzy
- Creating a buffet of meals using what’s still left in the freezer. A fun, no-waste way to end the week!
Bonus Treat: Raspberry Thumbprint Cookies
At some point this week, I’ll be baking a batch of Raspberry Thumbprint Cookies using freezer dough. A sweet little extra!
Where I Shop
I primarily shop at ALDI, but I also visit Walmart, Costco, and Trader Joe’s when needed. Keeping a mix of stores helps me find the best deals and variety. This week’s meal plan proves that you don’t need to spend a lot to create satisfying and delicious meals!
