Welcome back to another weekly meal plan! This early spring week is packed with family fun — a middle school dance (where I’ll be helping at the snack table!) and two track meets, both of which is out of town. With the weather still chilly and the sun playing hide-and-seek, I’m leaning into comforting meals that warm us up and fit our busy schedule.
As always, this plan is designed with my OMAD (One Meal a Day) intermittent fasting in mind — satisfying, full of flavor, and something to truly look forward to each day.
This Week’s Meals
Here’s a look at what we’re eating this week:
Monday:
A soup duo night! We’re having Tomato Soup and Chicken Noodle Soup. I don’t follow a specific recipe for the chicken noodle, but this one is very similar to what I make. It’s cozy and easy — perfect for a cold evening.
Tuesday:
We’re enjoying Steak Bites made in the air fryer and finished with a garlic butter sauce. I’m pairing them with creamy Mashed Potatoes and a side of sweet green peas for a hearty midweek treat.
Wednesday:
Soup again! We’ll be having leftovers from Monday — and I love not having to cook twice when the flavors get even better after a day in the fridge.
Thursday:
Easy and flavorful: Momofuku Spicy Soy Noodles with toppings and ALDI Chicken Potstickers on the side. This combo is a go-to for quick dinners that feel fun and different. I also prep many veggies – everyone builds the bowl they want! Favorites include green onion, cilantro, spinach, shredded carrot, pickled red onion, drizzle of sesame oil, garlic chili oil, sesame seeds… so many great options!
Friday:
Busy night alert! We’ve got a middle school dance and a track meet, so I’m keeping it simple with baked Nachos. I’ll have chips covered in melted cheese ready to go, plus toppings like meat, beans, salsa, and more for a quick, build-your-own style dinner.
Saturday:
We’re out of town for another track invitational and won’t know our exact dinner plans — but I’ll stay flexible and adjust based on how the day goes.
Sunday:
A classic comfort meal to close out the week: Roast, Mashed Potatoes, and buttery Green Beans. This meal always feels like a warm hug and brings everyone to the table.
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find great deals on both staples and fun seasonal finds. While ALDI is my go-to, I also shop at Walmart, Costco, and Trader Joe’s, and occasionally mix things up with subscription food boxes. Variety keeps things exciting — and helps me make the most of what I already have on hand.
