Welcome back to my weekly meal plan roundup! If you love food, meal planning, and exploring new flavors, you’re in the right place. As someone who practices One Meal a Day (OMAD) intermittent fasting, I focus on creating meals that are satisfying, full of variety, and something to look forward to every day.
This week marks the first full week of summer break, and it’s bringing a mix of celebration and rest. I’ve got a birthday dinner out, and I’m also having surgery later in the week, so I’ve kept this plan simple and flexible. I’m only planning through Thursday, and then Matt will be on meal duty—hopefully with enough groceries on hand to handle it! Here’s what we’re eating before I hand over the kitchen keys.
This Week’s Meals
Monday:
A hybrid meal built from last week’s leftovers! We’re making farfalle pasta with this delicious alfredo sauce, Italian sliced bread with butter and melted cheese, and a DIY salad bar to add freshness and variety.
Tuesday:
It’s breakfast-for-dinner day with French Toast Sticks (a family favorite), crispy bacon, and avocado toast on thick multigrain bread.
Wednesday:
A classic summer combo: smash burgers (made with ALDI frozen patties and topped with habanero sliced cheese), boiled sweet corn with butter, salt, and pepper, crispy fries, and a zesty bean salad.
Thursday:
We’re heading out for an early birthday dinner at one of my favorite local spots, La Cocina. I’m so looking forward to it!
Friday – Sunday:
I’ll be recovering from surgery, so Matt is in charge of food through the weekend. I expect we’ll keep things easy with some carry-out—especially since Sunday is Father’s Day!
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most groceries, but I also pick up extras from Walmart, Costco, Trader Joe’s, and occasionally use subscription food services to keep things fresh and exciting.
