Welcome back to my weekly meal plan roundup! This week is extra special—it’s the 4th of July here in the U.S., which means more time with family, festive food, and plenty of reasons to celebrate. We’ll be grilling, gathering, and soaking up some summer joy. As someone who practices One Meal a Day (OMAD) intermittent fasting, I still love savoring delicious, satisfying meals—and this week’s lineup is full of comforting classics, crowd-pleasers, and even a few patriotic nods.

This Week’s Meals
Here’s what’s on the menu this festive week:
Monday:
We’re firing up the grill! Grilling hot dogs, baking crispy ALDI onion rings, and boiling fresh corn on the cob with a little salt, pepper, and butter. A summer classic that’s quick, easy, and hits the spot.
Tuesday:
One of my family’s favorites—Sauerkraut Meatballs served with creamy mashed potatoes and warm, buttery rolls using Rhode’s frozen bread dough. It’s a cozy comfort meal that’s always a hit.
Wednesday:
Walking Tacos! Open a bag of Fritos or make it in a bowl—either way, load up with all your favorite toppings: tomato, onion, queso, shredded cheese, lettuce, pico, guac, sour cream, black olives, hot sauce, and taco meat. I always keep taco meat ready to go using this freezer prep method.
Thursday:
I’m heading out for a late breakfast this day (still my OMAD!), so we’ll keep dinner super simple—a pantry meal if needed, but likely skipping cooking altogether.
Friday (4th of July!):
Heading to a big family cookout to celebrate the holiday and my Grandpa’s birthday! We’re contributing this bean salad and bringing along some frozen ice cream and popsicles for a fun treat.

Saturday:
Back in the kitchen and making a comfort food staple—Instant Pot Ziti served with big salads. So easy and always satisfying.
Sunday:
It’s clean-out-the-fridge day! We’ll be eating up leftovers before heading out of town for a few days. I love having a flexible day like this built into my plan.
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most of my groceries, but I also shop at Wal-Mart, Costco, Trader Joe’s, and occasionally use subscription food companies to mix things up. The variety helps keep my meals exciting and fresh.
