Welcome back to my weekly meal plan roundup! This week feels a little quieter (thankfully!), and I’m leaning into comfort food, family time, and flexible meals that work for everyone — including softer bites while our sweet Mila continues to recover.
As always, these meals are tailored to fit my One Meal a Day (OMAD) intermittent fasting lifestyle. I focus on making each eating window delicious, satisfying, and something I genuinely look forward to. We’ve got everything from cozy pancakes and Greek bowls to a taco bar night with friends — plus a road trip ending in custard bliss!
This Week’s Meals
Prepping Monday and available all week:
I started the week by prepping cut watermelon and my go-to bean salad — I double the recipe and add an extra can of chickpeas for added texture and protein.
Monday:
We kicked things off with warm, pillowy buttermilk pancakes — the recipe is a keeper and easy to make with pantry staples! I topped them with a decadent praline sauce and served them alongside crispy baked seasoned breakfast potatoes. Cozy, comforting, and perfect for a slow start to the week.
Tuesday:
Jerk Chicken Wraps using the ALDI jerk chicken kit — so easy! We built each wrap to taste with options like shredded carrot, lettuce, cilantro, lime, dressing, shredded cheese, and of course, that bold jerk chicken. Served with crispy tater tots on the side. No exact recipe needed here — just a flavor-packed, customizable dinner.
Wednesday:
Girls night! I went out with my sister Libby (a rare treat 💕), and Dad held down the fort with the kids. They had an easy favorite: spaghetti night with boxed pasta, jarred sauce, Texas toast, and steamed peas.
Thursday:
DIY Greek Bowls are on the menu — perfect for letting everyone build their own plate. I roasted sheet pan chicken and red onion (same sauce, just simplified), added soft-baked potatoes using an ALDI Greek seasoning packet (experimenting here!), and made a zesty Greek dressing. Toppings included feta, kalamata olives, beets, pepperoncini, rice, and cauliflower rice.
Friday:
Leftovers night! Everything from earlier in the week was too good not to enjoy again.
Saturday:
Friends came over and we had a Taco Bar! We offered Birria Beef and classic taco meat, Spanish rice (a close match — I eyeball it!), and loads of toppings. Everyone made their own plate, and it was such a fun and festive way to eat together.
Sunday:
Road trip day! We headed east to visit Matt’s brother and wrapped up the weekend at our favorite JJ’s Custard Co in Dearborn. We also grabbed Dave’s Hot Chicken while we were there. The perfect combo of family, flavor, and summer fun.
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most groceries, but I also shop at Walmart, Costco, Trader Joe’s, and occasionally mix things up with food subscriptions. Variety keeps my OMAD meals exciting and fresh!
