Welcome back to this week’s meal plan! If you’re like me and love food, meal planning, and exploring new flavors, you’re in the right place. This week is a little different because I’m kicking things off with a three-day fast, letting Matt take the lead on meals in the early part of the week. But don’t worry—by Wednesday, I’ll be back to enjoying a delicious meal, and I have some cozy and comforting dishes planned as we transition (slowly) toward warmer weather.
This Week’s Meals
Here’s what’s on the menu this week:
Monday:
Since I’m fasting, Matt is keeping things simple with easy spaghetti, peas, and garlic bread for dinner. A quick, classic meal that everyone enjoys!
Tuesday:
Another easy night while I continue my fast. We’re having a pre-made Costco meal (TBD) with a salad kit to round it out.
Wednesday:
Breaking my fast with a favorite—Drunken Noodles! I triple the sauce, swap Hoisin for Oyster sauce, and add carrots. It’s always a hit and a great way to celebrate eating again!
Thursday:
A simple and satisfying meal—Chicken & Cheese Quesadillas. No recipe needed—just build them how you like!
Friday:
Soup night! I’m making two delicious soups, perfect for the cozy vibes still lingering in the air. Plus, we’ll have leftovers for Saturday!
- Black Bean Soup – A hearty and flavorful option.
- Old-Fashioned Noodle Soup – A cherished family recipe made with salt pork, potatoes, homemade noodles, and lots of pepper for that comforting, slow-simmered goodness.
Old-Fashioned Noodle Soup Recipe
- Ingredients:
- 1 large white onion, diced
- 12 oz salt pork
- 7-8 large russet potatoes, diced
- 8 cups water (6 to begin, 2 later)
- Black pepper (to taste)
- Salt (added at the end, about ½-1 tsp)
- Directions:
- Brown the diced salt pork, then add in the onion and sauté until translucent.
- Add 6 cups of water and the diced potatoes. Season with lots of black pepper and simmer for at least an hour (the longer, the better!).
- Bring to a boil, then prepare and add the noodles.
Homemade Noodles:
- 2 ½ cups all-purpose flour
- 3 large eggs
- Pulse together in a food processor, adding water as needed until the dough is pliable.
- Roll onto a floured surface, cut into your preferred size (they will expand!), and drop into the boiling soup.
- Boil briefly, then reduce heat and let it simmer. Low and slow makes for the best flavor!
Pair these soups with Crusty Bread—a must-have for dipping.
Saturday:
Leftover soup night! Perfect for an easy and relaxing weekend meal.
Sunday:
Chicken à la King served over Biscuits and Mashed Potatoes. A creamy, comforting classic to wrap up the week!
Where I Shop
I start the week with my Monday ALDI shopping trip, where I score amazing deals on staples and seasonal finds. ALDI is my go-to, but I also shop at Walmart, Costco, and Trader Joe’s, plus occasional food subscription services to keep things fun and varied.
