Welcome back to my weekly meal plan roundup! If you love food, meal planning, and exploring new flavors, you’re in the right place. As someone who practices One Meal a Day (OMAD) intermittent fasting, I focus on creating meals that are satisfying, full of variety, and something to look forward to every day.
This week marks the last week of school, and I’m also doing a 3-day fast that ends Wednesday morning, so my meals are extra intentional—quick, comforting, and easy to pull together while still feeling fun and flavorful. Plus, we’re celebrating a special occasion this weekend—our 17th wedding anniversary! I’m more than ready for the busy schedule to wind down and to settle into slower days, delicious food, and summer vibes.
Let’s jump into what’s on the menu!
This Week’s Meals
Monday:
Grilled cheese and boxed chicken noodle soup – simple, cozy, and perfect for a light prep day as I start my fast.
Mila is making Cookies & Cream Milkshake cookies to take to school for her teachers. She makes such delicious cookies, I will have to save one for later in the week!
Tuesday:
Farfalle pasta with Alfredo sauce, buttered Italian sliced bread, and peas on the side. A creamy, carby, comfort meal for the win!
These nuggets are available for the alfredo, as well as salad bar tomorrow

Wednesday:
Salad Bar Night! I love prepping a bunch of toppings and letting everyone build their own creation. This week’s spread includes:
- Chickpeas
- Air-fried chicken nuggets
- Frozen peas
- Beets
- Romaine lettuce & mixed greens
- Red onions (I’m making my own pickled red onions!)
- Balsamic dressing
- Shredded cheeses
- Pepitas, croutons & sunflower seeds

And of course, more of that Italian sliced bread with butter and cheese on the side. This is such a staple side in our house!
Thursday:
We’re having Butter Chicken with all the fixings. This meal was a hit last time, and I’m excited to enjoy it again after my fast ends. We were supposed to have it last week, so bonus – I didn’t have to buy anything for it!! It’s not uncommon for meals to shift.
Friday:
Leftover Butter Chicken from Thursday—always tastes even better the next day.
Saturday:
Date Night! We’re celebrating our 17th wedding anniversary. I won’t be cooking, but I’ll definitely be savoring a special meal out with my husband, Matt.
Sunday:
Lentil Shepherd’s Pie (from the freezer) and Rhodes rolls—an easy way to round out the week with a cozy, feel-good meal.
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most of my groceries, but I also shop at Wal-Mart, Costco, Trader Joe’s, and occasionally use subscription food companies to mix things up. The variety helps keep my meals exciting and fresh. You can watch this week’s grocery haul video here!
