Are you ready to dive headfirst into the delicious world of soup season? I know I am! There’s something undeniably magical about the crisp air, the falling leaves, and the joyous return of soup season. It’s that time of the year when we can trade in our summery salads for hearty, soul-warming bowls of comfort. And today, we’re going to celebrate this magnificent season by sharing with you a recent recipe I tried.
NEW = FUN!
There’s a certain joy in trying out a new recipe, isn’t there? It’s like embarking on a culinary adventure, where you’re the fearless explorer, and the kitchen is your undiscovered territory. And when it comes to embracing the chilly months of autumn, there’s no better way to start than with a steaming bowl of homemade soup.
New recipes had previously been love/hate for me. I would LOVE to try new foods, but as a dieter – yikes! – that also meant trying to either figure out portions, count calories or points, or even worse… make it low fat!
It’s no longer a problem, I try recipes with excitement – not dread! I can experiment, without fear of what macros, calories or anything else is. Now I focus on is it delicious, is it satisfying, etc. And dang, this most recent soup was a home run!
The Cauliflower Soup Magic
Now, let’s talk about cauliflower. This unassuming cruciferous vegetable might not be the star of your dinner table, but it’s about to steal the show in the most delightful way. When slow cooked to perfection and blended into creamy goodness, cauliflower takes on a whole new life, revealing its velvety, nutty essence. Pair it with a few simple ingredients like leeks, heavy cream, and sharp cheddar cheese, and you have the ultimate recipe for happiness.

- Sharp Cheddar: Last but not least, sharp cheddar cheese brings a tangy, sharp kick that complements the creaminess of the soup, elevating it to gourmet status. *I highly recommend sticking with sharp*
The Joy of Cooking
I love cooking (when I have time!), but aside from how delicious this soup is – another benefit is it’s SO easy! Chop, crockpot all day and then immersion blend! Final touches are to add the cream & cheese. Once melted and smooth you have a DELICIOUS soup.

This soup was my OMAD one day and I decided to skip my planned dinner the next day to have leftovers of this!!
I enjoyed my bowl topped just as the author of the recipe suggested (bacon, green onions and more shredded cheddar. I also served with pretzel rolls.
