Welcome back to my weekly meal plan roundup! If you love food, meal planning, and exploring new flavors, you’re in the right place. As someone who practices One Meal a Day (OMAD) intermittent fasting, I focus on creating meals that are satisfying, full of variety, and something to look forward to every day.
This week, we’re battling illness in our house and trying to get everyone healthy again, all while winding down basketball season. With two games on the schedule, I need easy, comforting meals that warm us up from the inside out. The cold and snowy weather calls for cozy favorites, and I’m leaning into hearty, nourishing meals that don’t take too much effort. Plus, with my husband away Saturday, I’m taking the kids out for a fun meal!
Here’s what’s on the menu this week:
This Week’s Meals
Monday (Leftovers):
- Chicken & Dumplings
- Mashed Potatoes
- Canned Corn
- Homemade Biscuits
Tuesday:
- Shredded Chicken Sandwiches
- Roasted Carrots
- Roasted Potatoes
Wednesday:
Thursday:
- Experimental Soup – a mix of broccoli cheese, veggie, and potato. No exact recipe yet, but I’ll experiment and report back! It might resemble something like this soup.
Friday:
- Chicken Shawarma Meal (Watch the video for a full start-to-finish breakdown!)
Saturday:
- Out to eat! Taking the kids out for a fun meal while Dad is away.
Sunday:
- Leftover Chicken Shawarma Meal
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most of my groceries, but I also shop at Walmart, Costco, Trader Joe’s, and occasionally use subscription food companies to mix things up. The variety helps keep my meals exciting and fresh.
