Welcome back to this week’s meal plan! As always, I love putting together meals that are satisfying, flavorful, and something to truly look forward to each day. This week, Michigan is reminding us that winter isn’t quite ready to let go—brr! And with outdoor track meets starting up (send warm thoughts!), hearty and cozy meals are definitely on the menu. Plus, Wednesday is a fun one—we’re heading to a pizza buffet while watching The Price is Right episode we attended. Let’s dive into the meal plan!
This Week’s Meals
Monday: Baked Potatoes (Crock Pot Method) I love making baked potatoes in the crock pot—so easy! Top yours with butter, sour cream, homemade or store-bought bacon bits, steamed broccoli, shredded cheese, salsa con queso, salt, and pepper. I’m sitting this one out since I’m doing a down day for Alternate Day Fasting.
Tuesday: Minestrone Soup (Recipe) & Italian Bread
A cozy, veggie-packed soup that’s perfect for this lingering cold weather. Paired with fresh Italian bread for dipping, this meal is pure comfort!
Wednesday: Fend for Yourself Night
We’re keeping it simple—either enjoying leftover minestrone soup or finding something easy from the pantry. The real foodie highlight of the day? A pizza buffet while watching The Price is Right episode we attended!
Thursday: Gnocchi
Hopefully, I’ll be able to snag a frozen Trader Joe’s gnocchi meal! Gnocchi is such a fun, quick meal—rich, pillowy bites of deliciousness.
Friday: Totchos
Think tater tots, but turned into nachos! Load them up with cheese, sour cream, bacon bits, and any other toppings you love. I’m skipping this meal since I’ll be out for lunch with a friend for my OMAD.
Saturday: Creamy Smothered Chicken & Rice (Recipe), Green Beans (Similar Recipe), & Rhode’s Rolls
A warm, creamy chicken dish served over rice with a side of green beans and fluffy Rhode’s rolls. This is a new meal, but I have high hopes we’ll like it!! Pure comfort food!
Sunday: Homemade KFC Bowls (Like These!)
If you love KFC’s famous bowls, you’re in for a treat! We’re making them at home, complete with crispy popcorn chicken, creamy mashed potatoes, and delicious sides.
Where I Shop
Every Monday, I head to ALDI to grab my weekly staples and seasonal finds. ALDI is my main go-to, but I also mix in trips to Walmart, Costco, and Trader Joe’s (especially when I need gnocchi!). Variety keeps things exciting!
