Welcome back to my weekly meal plan roundup! This week marks our final full week of school—and while we’re not traveling, life still feels full as we prep for slower days, sleeping in, and summer fun. I’m so ready for a more relaxed routine, and this week’s meal plan reflects that. From easy leftovers to quick favorites and a big Memorial Day cookout, every meal is satisfying, flavorful, and perfect for OMAD (One Meal a Day) living.
Whether you’re gearing up for summer too or just looking for some delicious ideas to add to your own routine, I hope this plan gives you a little inspiration!
This Week’s Meals
Here’s a sneak peek at what’s on the menu this week:
Monday:
Memorial Day Cookout! We’re grilling brats and hamburgers, enjoying potato puffs, sweet corn, potato salad, and coleslaw. No recipes today—just good food and good vibes. YUM!
Tuesday:
Leftovers from Monday’s cookout, plus some classic comfort: a box of Annie’s Mac and Cheese.
Wednesday:
Homemade Butter Chicken—rich, flavorful, and incredibly satisfying. I shared the full meal over on YouTube if you want to see exactly how I enjoyed it!
Thursday:
A quick and easy meal with help from Sam’s Club Frozen Stir Fry and extra veggies. I’m also cooking chicken breast low and slow all day in the mini crockpot with spicy bulgogi sauce. No recipes today—just tasty shortcuts!
Friday:
Leftover Butter Chicken from Wednesday. Even better the second time around!
Saturday:
Think Skyline-style chili, but I’m using this recipe with a twist—I omit the meat and use veggie broth instead. We’ll have cornbread, spaghetti noodles, shredded cheese, diced onion, and sour cream so everyone can build their own perfect chili bowl.
Sunday:
A classic leftover day to clean out the fridge and prep for my quarterly 3-day fast, which I’ll start after this meal!
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most groceries, but I also shop at Walmart, Costco, Trader Joe’s, and occasionally mix things up with food subscription services. The variety keeps our meals exciting, affordable, and fresh.
