Welcome back to my weekly meal plan roundup! This week’s meals are all about simplicity and ease—because I’m currently recovering from surgery, and I’m giving myself permission to take it slow in the kitchen. Even with recovery in full swing, I’m still enjoying my OMAD lifestyle, and I’ve leaned into prepping grilled chicken to stretch across multiple meals. I’m genuinely loving how easy and versatile it is—especially with summer salads!
If you’re practicing One Meal a Day (OMAD) intermittent fasting or just looking for flavorful and simple meal ideas, you’re in the right place. This week’s plan is full of no-fuss, satisfying meals (plus one celebratory steak night!) that have helped make my week feel deliciously doable.

This Week’s Meals
Monday:
We fired up the grill to make flavorful grilled chicken (I used that recipe as a reference, but we kept it simple), paired with fresh salad fixings. We’re hoping this becomes a weekly habit—it’s so nice having grilled chicken ready to go!
Tuesday:
Quick and comforting: spaghetti topped with frozen meatballs, jarred sauce, and steamed frozen veggies. Instead of serving it in a bowl, we stack it all on a slice of garlic bread and sprinkle with parmesan. The spaghetti stack is fun, filling, and a big hit around here.
Wednesday:
🎉 I’m celebrating five years of fasting—what a milestone! I will pick up a Texas Roadhouse steak for carryout to mark the occasion. It feels great to celebrate this journey with a meal I love and still feel so excited about.
Thursday:
Back to our grilled chicken and salad fixings, using pantry ingredients to keep it fresh and varied. I might toss in some sunflower seeds, olives, or use a different dressing to mix things up!
Friday:
Still loving the grilled chicken and salad combo. When you prep once and eat well all week, it feels like a win!
Saturday:
We’re heading to Matt’s parents’ house for dinner. I’m always grateful for a night off from cooking and a chance to enjoy family time around the table.
Sunday:
More grilled chicken and salad fixings—are you sensing a theme? 😂 We will see if they last this long…. or if it’ll end up carry out pizza with salad!
Where I Shop
I kicked off the week with my Monday ALDI shopping trip. ALDI always delivers when it comes to affordable staples and fun seasonal finds. I also occasionally pick up extras from Walmart, Trader Joe’s, or Costco depending on what we need. The mix keeps things interesting and budget-friendly!

🧺 Bonus Recipe:
I recently brought a cold pasta salad to a cookout and it was a big hit! Here’s what I used:
- 1.5 lbs cooked and cooled pasta
- Chopped veggies (I used cauliflower, celery, and carrots for a nice crunch)
- 1 can tomato sauce
- 1 bottle Italian dressing
- Grated parmesan cheese (use to your taste!)
- 2 cans chickpeas, drained
- Season generously with salt, pepper, and Italian seasoning
Mix it all together and refrigerate until ready to serve. It’s easy, hearty, and full of flavor!
