Homemade Chicken & Dumplings Recipe
Ingredients
For the Chicken Broth:
- 12 cups water
- 3 large boneless, skinless chicken breasts
- 5 celery stalks, chopped
- 5 cloves garlic, chopped
- 1 large onion, chopped
- 1 tbsp dried parsley
- 3 bay leaves
For the Gravy:
- 12 cups strained chicken broth (from above)
- 2 tbsp lemon juice
- 2 tsp coarse ground black pepper
- 1 tsp salt
For the Dumplings:
- 4 cups all-purpose flour
- 2 tbsp baking powder
- 2 ½ tsp salt
- 2 ¼ cups milk (whole or 2%)
Instructions
1. Make the Chicken Broth
- In a large Dutch oven, bring 12 cups of water to a boil.
- Add chopped celery, garlic, onion, dried parsley, bay leaves, and chicken breasts.
- Reduce heat to low and simmer for about 4 hours.
- Remove chicken and set aside to cool. Strain the broth, discarding the vegetables.
2. Prepare the Gravy Base
- Return 12 cups of strained chicken broth to the pot and set to low simmer.
- Stir in lemon juice, black pepper, and salt.
3. Make the Dumpling Dough
- In a large bowl, whisk together flour, baking powder, and salt.
- Gradually add milk, stirring to form a soft dough.
- Let the dough rest for 10 minutes.
4. Roll and Cut the Dumplings
- Lightly flour a clean surface and roll out the dough to your desired thickness.
- Use a knife or pastry wheel to cut into small rectangles.
5. Cook the Dumplings
- Drop the dumplings into the simmering broth one at a time.
- Reduce heat to low and cook uncovered for 30 minutes, stirring occasionally.
6. Add the Chicken
- While the dumplings cook, shred or chop the chicken into bite-sized pieces.
- Stir the chicken into the pot and simmer for another 20 minutes, allowing the gravy to thicken.
7. Serve and Enjoy!
- Serve hot, optionally with green beans, rolls, biscuits, cornbread, or even mashed potatoes for the ultimate comfort meal!
