Welcome back to my weekly meal plan roundup! If you love food, meal planning, and exploring new flavors, you’re in the right place. As someone who practices One Meal a Day (OMAD) intermittent fasting, I focus on creating meals that are satisfying, full of variety, and something to look forward to every day. This week’s meal plan is filled with delicious options that I’m excited to share with you!
This Week’s Meals
Here’s a sneak peek at what’s on the menu this week:
Monday: Leftover Butter Chicken – A meal so good, it’s worth eating twice! This creamy, flavorful butter chicken is perfect over rice or with warm naan to soak up the rich sauce. Watch the Recipe Here
Tuesday: Out to Eat (School Fundraiser) – Taking a break from cooking and supporting our local school. It’s always fun to enjoy a meal out while giving back!
Wednesday: Penne Pasta Night – A crowd-pleaser! I’m making a simple penne pasta with a choice of marinara, alfredo, or just butter and parmesan for a comforting classic. Paired with a fresh salad kit and warm Rhodes rolls, this meal is easy and satisfying.
Thursday: Breakfast for Dinner – One of my favorite ways to mix things up!
- Crispy hash brown patties paired with sweet applesauce create a perfect sweet-savory bite. Watch the Recipe
- Blueberry pancakes with a drizzle of syrup make this meal feel extra special. Watch the Recipe
Friday: Lo Mein – A quick and flavorful stir-fry loaded with fresh veggies and noodles, tossed in a savory sauce. This homemade version is better than takeout! Watch the Recipe Here
Saturday: Comfort Food Night – Cozy, homemade goodness all around!
- Chicken & Dumplings: Soft, pillowy dumplings in a rich, comforting broth. This is a copycat recipe from Cracker Barrel!
- Mashed Potatoes: Creamy and buttery, the perfect side for a hearty meal. I always make them in the instant pot; so easy!
- Canned Corn: Simple and sweet, rounding out the plate.
- Homemade Biscuits: Flaky, buttery biscuits that are perfect for dipping if you’re Matt or with butter and honey if you’re me!
Sunday: Leftovers & Super Bowl Snacks – Game day means snack heaven! Instead of stressing about food, I’m shifting my eating window to enjoy all the fun flavors with my family. No guilt, no overthinking—just good food and good times!
Game Day Snack Lineup:
- Fried Pickles & Onion Rings – A crispy, salty treat from Gordon Food Service.
- Mini Corn Dogs – Served with a trio of dipping sauces: honey mustard, sweet heat mustard, and ranch.
- Soft Pretzels – Warm, chewy, and perfect with cheese or mustard.
- Jalapeño Poppers – These ALDI finds are a favorite treat to me… bringing just the right amount of heat but with veggies & protein!
- Chips & Salsa – A simple must-have for any party.
- Dessert Pizza – Something sweet to end the night on a high note! Bonus, Matt makes this!
Where I Shop I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most of my groceries, but I also shop at Wal-Mart, Costco, Trader Joe’s, and occasionally use subscription food companies to mix things up. The variety helps keep my meals exciting and fresh. Check out my grocery haul to see how I stocked up for the week! This week I had the bonus of also shopping at Gordon Food Service.
