Welcome back to another weekly meal plan roundup! With the school year winding down, this week is packed—we’re juggling events across elementary, middle, and high school. That means quick, comforting meals take center stage, with a few extra-special touches thanks to some help from my girls (plus a one-on-one date night with each of them—my favorite!).
If you’re new here, I practice One Meal a Day (OMAD) intermittent fasting and love sharing meal ideas that are satisfying, flexible, and full of joy. Whether it’s a week of leftovers or a homemade sub night, each meal is something I genuinely look forward to—and I hope it gives you some ideas for your own weekly plan.
This Week’s Meals
Monday
Leftovers from Easter + pantry staples. It’s a clean-out-the-fridge kind of Monday!
Tuesday
Chicken Pot Pie Orzo – I’m adapting this creamy, cozy dish by using vegetarian broth and splitting the recipe at the end—half gets shredded chicken, half gets chickpeas. It’s hearty and perfect for a busy weeknight.
Wednesday
Make-at-home Jimmy John’s! I grab their day-old bread (a steal!), then we build our own subs with favorite deli meats, cheeses, veggies, and sauces. Chips and a salad kit round it out for a fast, fun dinner.
Thursday
Spicy Potato Tacos with Spanish Rice from the rice cooker. Chips, fresh pico, and avocado on the side—simple, spicy, and satisfying.
Friday
Mila’s in charge of dinner! She’s making spaghetti with marinara, peas, and garlic bread. It’s a classic and one of her favorite meals to make and eat. I get to enjoy a one-on-one date night with Elsie tonight too!
Saturday
Elsie’s turn to cook: chicken extra noodle soup, grilled cheese, and salads. It’s cozy comfort food, and I’ll be out with Mila for our date night.
Sunday
Grilling up hamburgers with a side of Baked Garlic Parmesan Fries. Easy, fun, and the perfect way to wrap up the week.
Where I Shop
I start my week with a trip to ALDI—check out my latest shopping haul video here! ALDI is my go-to for great prices and seasonal favorites, but I also like to mix it up with Walmart, Costco, Trader Joe’s, and occasional food delivery services to keep things interesting and flexible.
