Welcome back to my weekly meal plan roundup! If you love food, meal planning, and exploring new flavors, you’re in the right place. As someone who practices One Meal a Day (OMAD) intermittent fasting, I focus on creating meals that are satisfying, full of variety, and something to look forward to every day.
This week’s meal plan is especially geared toward busy schedules — because let’s be honest, when does life actually slow down? Between a packed calendar full of doctor appointments and a special date night with Mia that we had to reschedule, quick and comforting meals are the name of the game. I’m excited to share what we’ll be eating!
This Week’s Meals
Here’s a sneak peek at what’s on the menu this week:
Monday:
Leftovers from our family dinner or pantry options — easy and flexible depending on what sounds good!
Tuesday:
Baking chicken and veggie mini tacos, served with salsa, salsa con queso, sour cream, and avocado.
On the side, I’m making potato circles seasoned with a fun twist inspired by a Pinterest recipe.
Wednesday:
Cozying up with a bowl of Red Lentil Dal, steamed broccoli, jasmine rice made in the rice cooker, and buttered, toasted naan.
Thursday:
An easy comfort dinner: frozen gnocchi prepared according to the package directions (I’m using two bags to feed everyone!), a bag of steamed frozen shelled edamame, and some delicious pull-apart bread on the side.
Friday:
A full, hearty meal!
- Greek Chicken Tenders baked to perfection
- Creamy Mashed Potatoes
- Sweet Roasted Carrots
- Boiled corn on the cob (no recipe needed — just boil and slather with butter, salt, and pepper!)
- Fluffy Rhodes Rolls
Saturday:
Elsie’s taking over the kitchen tonight! She’s making her classic extra noodle chicken soup, plus grilled cheese and salads. (No formal recipes here — just cozy homemade goodness.)
Sunday:
Leftovers from Friday’s meal.
I intentionally planned a little extra because we all love that meal — and I know no one will be complaining when it shows up again for dinner!
Treat of the Week
Somewhere between the chaos, Matt is planning to make chocolate chip cookies using Sally’s Baking Addiction recipe.
(Confession: I’m not a chocolate chip cookie fan… but I am a fan of Matt getting excited to bake!)
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most of my groceries, but I also shop at Walmart, Costco, Trader Joe’s, and occasionally use subscription food companies to mix things up. The variety helps keep my meals exciting and fresh!
