Welcome back to my weekly meal plan roundup! This week is extra special because it’s spring break, which means the kids are home all week. To make it even more fun, each of them is taking a turn picking and making a meal—Mila on Monday, Kel on Tuesday, and Elsie on Saturday. I love seeing what they choose and how they put their own spin on things. If you love food, meal planning, and delicious family-friendly meals, you’re in the right place!
This Week’s Meals
Monday: Leftover Popcorn Chicken & Cornflake Potatoes (recipe here) with Green Beans (recipe here) – Mila’s pick! We’re keeping it crispy and comforting with leftover popcorn chicken, homemade Cornflake Potatoes, and a side of buttery, flavorful green beans to round out the meal.
Tuesday: Spaghetti on Texas Toast with Salad – Inspired by our visit to Mom’s Spaghetti in Detroit, Kel loved this idea last summer and wanted to recreate it at home. A simple but delicious twist on spaghetti night!
Wednesday: Dave & Buster’s Night – We’ll be out for the evening, so dinner plans are still up in the air. I love a midweek break from cooking!
Thursday: Pan-Fried Chicken (similar recipe here) & Cacio e Pepe Gnocchi (from my latest Trader Joe’s haul) – A mix of homemade crispy chicken and a quick and delicious gnocchi dish for a comforting meal.
Friday: Pizza Night & Salads – A classic Friday tradition! We’re keeping it easy with carryout pizza and fresh salads to balance it out.
Saturday: Crepes (recipe here) with Strawberry Rhubarb Sauce (recipe here) & Baked Breakfast Potatoes (recipe here) – Elsie’s choice! A fun breakfast-for-dinner night with fresh fruit and crispy potatoes.
Sunday: Steak Bites (air-fried with garlic butter sauce), Mashed Potatoes (recipe here), & Peas – A cozy, satisfying meal to wrap up the week!
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most groceries, but I also shop at Walmart, Costco, Trader Joe’s, and sometimes use subscription food services to mix things up. You can watch my latest grocery haul video here!
