Welcome back to my weekly meal plan roundup! If you love food, meal planning, and exploring new flavors, you’re in the right place. As someone who practices One Meal a Day (OMAD) intermittent fasting, I focus on creating meals that are satisfying, full of variety, and something to look forward to every day.
This week will start with sunshine, spring energy, and a trip to the park while I embraced a long fast. The week ends with Easter Sunday — though we haven’t nailed down our plans just yet (maybe a BBQ?!). I’m especially excited to try ALDI’s new cornbread mix for a batch of Hot Honey Cornbread alongside soup on Thursday night. Keep reading for all the delicious details, and don’t miss this week’s ALDI haul that brought it all together!
This Week’s Meals
Here’s a sneak peek at what’s on the menu this week:
Monday:
A quick and simple comfort classic — boxed mac and cheese, served with fresh fruit and veggies. After dinner, we headed to the park so Kel could play while I got a great walk in during a down day (long fast).
Tuesday:
Frozen gnocchi (we cooked up two packs!) with bread, butter, and cheese on the side, plus hearty salads to round out the plate.
Wednesday:
Loaded hashbrowns night! I’ll make homemade hashbrowns and set out a toppings bar for everyone to customize: chorizo, bacon bits, egg, avocado, salsa, hot sauce, salsa con queso, shredded cheese, and black beans.
Thursday:
Soup duo night: Black bean soup and loaded potato soup — both vegetarian-friendly! We only use bacon as a topping and cook with veggie broth. I’ll also be baking the new ALDI cornbread mix into Hot Honey Cornbread — can’t wait to try it!
Friday:
Leftover soup night — easy, cozy, and delicious.
Saturday:
I’m making Chicken Pot Pie Orzo, with a twist. I’m using vegetarian broth and will split the batch at the end — one half with chickpeas and the other with shredded chicken. Perfect for pleasing everyone!
Sunday:
Easter Sunday — no official plans yet, but a BBQ is sounding realllly good. Sunshine + grilled food? Yes please.
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most of my groceries, but I also shop at Walmart, Costco, Trader Joe’s, and occasionally use subscription food companies to mix things up. The variety helps keep my meals exciting and fresh.
