The Joy of Trying New Recipes: My Mississippi Pot Roast Love Story

One of my favorite parts of practicing OMAD is the freedom it brings. Instead of spending all day thinking about food, planning endless snacks, or stressing over every calorie, I get to focus on what really matters: savoring a meal I genuinely love. And let me tell you, nothing brings me more joy than discovering a new recipe that fits perfectly into this lifestyle.

Lately, I’ve been head-over-heels for a dish that’s both simple and utterly satisfying: Mississippi Pot Roast. I stumbled across this recipe recently (link to recipe), and it’s been a delight in my kitchen.

A New Recipe, A New Joy

The beauty of OMAD is that there’s no need to restrict or worry about what’s “allowed.” When I find a recipe that sparks my curiosity, I can dive in wholeheartedly. Mississippi Pot Roast is one of those recipes that makes your home smell amazing all day, and when it’s finally time to eat, the payoff is chef’s kiss.

This version of the classic pot roast skips the processed seasoning packets, and instead, it’s made with simple, wholesome ingredients like chuck roast, seasonings, pepperoncini peppers, and a bit of butter. Slow-cooked to perfection, the roast practically falls apart as you lift it out of the Crockpot.

What I love most? It’s not just about the roast itself. OMAD lets me enjoy the meal as a whole experience—choosing sides, savoring every bite, and creating a plate that feels complete.

Satisfaction to the Max

Here’s how I’ve been serving up my Mississippi Pot Roast lately:

  • Tender, juicy pot roast as the star of the plate.
  • Buttered rolls on the side (yes, buttered rolls—because I’m not afraid to enjoy bread).
  • Creamy mashed potatoes or buttery corn as my comfort-food carb (or both!)
  • A side salad for some freshness and crunch.

Every bite is pure joy. The flavors meld together in a way that feels indulgent but not overdone. I love the way the tangy pepperoncini adds just a little zing and spice to the rich roast, and the rolls are perfect for sopping up the extra juices.

There’s something so satisfying about sitting down to a plate like this and knowing I can truly enjoy it without guilt. I eat until I’m satisfied, savoring every forkful.

The Bigger Picture

For me, trying a new recipe isn’t just about the food—it’s about embracing the joy and freedom that OMAD brings to my life. Cooking and eating have become something I look forward to every day. It’s a time to explore, create, and nourish my body without the pressure of counting, restricting, or overthinking.

I still remember wanting to try a new recipe while on Weight Watchers or calorie counting and skipping it because figuring out how it could fit into whatever diet I was on seemed too difficult!

Mississippi Pot Roast is just the latest recipe to bring that joy into my life, but it won’t be the last. Whether it’s a fancy dish or something simple, I know I can adapt it to my OMAD lifestyle and enjoy it fully.

I have this drawer that I put mom’s snacks in. I have this drawer that I put mom’s snacks in.  It used to be a secret, but everyone knows about it now.  It’s just off limits - unless you’re me 😅  Today I added mini bags of gummy bears.  I love these things and now have roughly 54 of them 🥳. They’ll last me a very long time.
