Welcome back to my weekly meal plan roundup! Can you believe January is almost over? This time of year always flies by, but I’m still soaking up the cozy vibes of warm, comforting meals. If you love food, meal planning, and exploring new flavors, you’re in the right place. As someone who practices One Meal a Day (OMAD) intermittent fasting, I focus on creating meals that are satisfying, full of variety, and something to look forward to every day. This week’s meal plan is filled with delicious options that I’m excited to share with you!
This Week’s Meals
Here’s a sneak peek at what’s on the menu this week:
Monday:
Chickpea Noodle Soup and Lasagna Soup (I added cauliflower for extra veggies in the lasagna soup!). For dessert, I made Apple Dumplings, and they were a huge hit. Elsie gave them two thumbs up, and Matt declared that – while delicious – next time they need to be served with vanilla ice cream—duly noted!
Tuesday:
Beef and Broccoli along with Sesame Noodles. Diced green onions and sesame seeds make the perfect garnish for these flavorful dishes.
Wednesday:
Leftovers night! Soup leftovers are on the menu since my daughter has an out-of-town basketball game. This makes it a practical and stress-free evening meal.
Thursday:
Homemade subs using Jimmy John’s day-old bread (a steal from last week’s meal plan). Customize these with your favorite deli meats, cheeses, and toppings for a fun DIY dinner!
Friday:
Carryout pizza paired with homemade salads. This easy end-of-week meal lets us unwind as a family—likely over a cozy movie night!
Saturday:
Butter Chicken—a family favorite. For the vegetarian in our household, we skip the sauce but keep all the delicious sides, including rice, naan, and broccoli.
Sunday:
Leftovers of Saturday’s Butter Chicken. The effort that goes intothis dish absolutely deserves two nights of enjoyment!
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most of my groceries, but I also shop at Wal-Mart, Costco, Trader Joe’s, and occasionally use subscription food companies to mix things up. The variety helps keep my meals exciting and fresh.
