Welcome back to my weekly meal plan roundup! If you love food, meal planning, and exploring new flavors, you’re in the right place. As someone who practices One Meal a Day (OMAD) intermittent fasting, I focus on creating meals that are satisfying, full of variety, and something to look forward to every day.
This week is a fun one—I’m traveling (again!)—this time to Washington D.C. with my daughter’s middle school class. I’m chaperoning a group of 7th and 8th graders, which I’m really looking forward to… though I’m slightly less excited about the long bus ride. 😅 (Yes, my AirPods are already packed!) That means this week’s plan includes a couple of homey favorites at the beginning of the week, followed by several days of restaurant meals and food on-the-go. Let’s get into it!
This Week’s Meals
Here’s a sneak peek at what’s on the menu this week:
Monday:
Blaze Pizza night! I had a free pizza reward and 30% off the rest of the order—too good to pass up. Plus, my husband is away, so this made for a fun and easy dinner with the kids!
Tuesday:
We’re making Grandpa’s Special, a family favorite that always hits the spot. I’m also prepping a batch of Instant Pot Applesauce to enjoy with it—so comforting and cozy.
Wednesday:
Dinner is Instant Pot Ziti, served with a side of buttered bread and cheese, plus Air Fried Asparagus (though I usually just toss it with salt, pepper, and avocado oil, and air fry at 400°F until tender—cooking time really depends on thickness, so just shake and check periodically!).
Thursday:
On the road! I’m traveling with my daughter Elsie and her classmates, so we’ll be eating out in Washington D.C. My husband is on dad duty at home for the rest of the crew.
Friday:
Still in D.C.! Another restaurant meal as we explore the city.
Saturday:
More travel adventures and meals out with Elsie and her classmates!
Sunday:
Wrapping up our trip with one more day of eating out before heading home. Dad continues to hold down the fort. ❤️
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most of my groceries, but I also shop at Walmart, Costco, Trader Joe’s, and occasionally use subscription food companies to mix things up. The variety helps keep my meals exciting and fresh.
