Weekly Meal Plan & Grocery Haul
Spring is almost here, and I’m celebrating St. Patrick’s Day in the tastiest way possible—by enjoying a Reuben sandwich! In fact, I’ll be savoring it for three days straight because when it’s one meal, it has to be one I love! Michigan’s weather is all over the place, but that won’t stop me from enjoying a week full of delicious, satisfying meals. Plus, Sunday’s Greek Bowls are a big one, so I’m already looking forward to leftovers on Monday!

This Week’s Meals
Monday: Crunchwraps & Reuben Sandwich
We’re starting the week with homemade Crunchwraps (recipe inspiration). I love keeping things easy by premaking and freezing my beef (see my method). On the side, we’ll have Spanish rice (recipe) and homemade salsa (inspired by this recipe).
👉 My OMAD meal: A Reuben sandwich (recipe) with potato salad and coleslaw (corned beef recipe). A festive and satisfying way to celebrate St. Patrick’s Day! 🍀
Tuesday: Spaghetti Night & More Reubens
A classic, no-fuss meal—spaghetti with peas and garlic bread. Perfect for a busy night!
👉 My OMAD meal: Another Reuben with coleslaw and potato salad (not mad about it!).
Wednesday: Walking Tacos & The Last Reuben
Leftover Spanish rice from Monday is getting a new life with Walking Tacos (watch here). We skip the bag and serve them in bowls, but the idea is the same—fun and flavorful!
👉 My OMAD meal: The last of my Reuben sandwiches, coleslaw, and potato salad. Three days straight, and I’m still loving it!
Thursday: Fried Rice & Egg Rolls
A quick and easy dinner using food we already have: fried rice from a previous Sam’s Club haul with ALDI chicken egg rolls. For those who eat meat, I’ll also have premade shredded chicken on the side. Love a meal that doesn’t require any new groceries! 🎉
Friday: Carry-Out Pizza & DIY Salads
Pizza night! We’ll grab carry-out pizza and make salads at home, loading them up with our favorite toppings. A simple and delicious end to the week.
Saturday: Cozy Potato Pot Pie
Think Chicken Pot Pie, but vegetarian! Instead of chicken, I’m using potatoes and veggie broth, plus lots of fresh veggies. If you want to make your own version, here are two similar recipes: Veggie version | Chicken version.
👉 On the side: Homemade crusty bread (recipe) with butter and cheese. A warm, hearty meal perfect for a chilly night!
Sunday: Greek Bowls
I bake chicken and red onions (recipe), then everyone builds their own Greek Bowls with toppings like kale, feta, rice, cauliflower rice, kalamata olives, beets, and homemade dressing (recipe). This is a big meal, so I’m already planning on leftovers for Monday. Future me is going to be very happy! 😆
Final Thoughts
This week’s meals are packed with flavor, variety, and a mix of easy go-to’s and fun homemade dishes. I’m extra excited for my St. Patrick’s Day Reuben fest and looking forward to a cozy weekend meal with my Potato Pot Pie and fresh-baked bread. And let’s be real—Greek Bowls are always a winner!
