Welcome back to my weekly meal plan roundup! If you love food, meal planning, and exploring new flavors, you’re in the right place. As someone who practices One Meal a Day (OMAD) intermittent fasting, I focus on creating meals that are satisfying, full of variety, and something to look forward to every day. This week’s meal plan is filled with delicious options that I’m excited to share with you!
This Week’s Meals
Here’s what’s on the menu this week:
Monday: Tostadas with a side of Fiesta Potatoes. Just load tostada shells with your favorite toppings and enjoy! For the potatoes, I skip boiling if using canned—simple and flavorful!
Tuesday: Hot dogs, mac and cheese, and cantaloupe. A basic but delicious meal, especially for a busy night. This happens to be my 8-year-old son’s favorite!
Wednesday: Spicy Rigatoni with Rhodes Garlic Pull-Apart Bread. I’m excited to try these two new recipes!
Thursday: Calzones with a side salad. Everyone can build their own, making this a fun and customizable meal.
Friday: Out to eat after Mila’s JV Basketball game. We’re hoping Qdoba runs their Valentine’s BOGO deal—it’s a family favorite, so double win!
Saturday & Sunday: Chicken & Dumplings, Mashed Potatoes, canned corn, and Homemade Biscuits. This meal was moved from last week to this week, and I can’t wait to dig in!
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most of my groceries, but I also shop at Walmart, Costco, Trader Joe’s, and occasionally use subscription food companies to mix things up. The variety helps keep my meals exciting and fresh.
