Welcome back to another weekly meal plan roundup! If you love food, meal planning, and savoring every bite of your One Meal a Day (OMAD) lifestyle, you’re in the right place. This week is a mix of intentional home-cooked meals using what I already have on hand and a quick celebratory trip to New York City where I’m chasing iconic eats like street hot dogs, $1 slices, and the dreamiest bagels with layers of cream cheese.
At home, I’m using previously prepped or purchased items—like birria beef, cheeses, crackers, and pantry staples—to create delicious meals while reducing food waste (and saving a little money too). Then, it’s off to NYC for a three-day foodie adventure I’ve been dreaming about for years!
Let’s take a look at what’s on the menu this week.
This Week’s Meals
Monday:
Birria Tacos with Consommé + All the Toppings
Using leftovers from a fun get-together with friends, I’m turning Birria Beef into tacos with consommé, combining it with leftover taco meat and a scoop of Spanish rice (I don’t really measure—this is just a close match!). Plus, we’re loading up on toppings like lettuce, cheese, onions, and cilantro.
Tuesday:
Charcuterie + Salads + Rhubarb Tart
We’re building a no-cook, low-effort plate tonight: open cheeses, crackers, olives, and salad greens. I’m using what’s in the fridge to keep things simple. Dessert? A dreamy rhubarb tart!
✨ Fun fact: This meal was inspired by a celebrity “What I Eat in a Day”… can you guess who?
Wednesday:
Panera Mac & Cheese + Salads
I’m using the Panera mac and cheese from Costco that we already had on hand, paired with fresh salads. This one’s all about easy comfort food before heading out of town.
Thursday:
Travel Day: NYC Bound!
We’re off on a fast, fun trip to New York City! No home-cooked meals today—but lots of excitement for the food ahead.
Friday:
Full Day in NYC!
You better believe I have a list of iconic foods to hunt down. Think: a hot dog from a street cart, a $1 slice of pizza, a bagel stacked high with cream cheese, and so much more.
Saturday:
Travel Home from NYC
After a fast-paced trip, we’ll be back home. No big plans for a formal meal—just recovering and maybe dreaming of everything I tasted.
Sunday:
Salads + French Bread Pizzas
Using ALDI’s French bread pizzas from the freezer for a quick and satisfying Sunday dinner, served with a big salad to round it out.
Where I Shop
I usually kick off each week with my Monday ALDI shopping trip, where I find amazing deals on groceries and seasonal favorites. It’s my go-to for most things, but I also mix in hauls from Wal-Mart, Costco, and Trader Joe’s to keep things fresh and fun. Sometimes I’ll add in a food subscription or a specialty store haul when I’m feeling adventurous.
