Welcome back to my weekly meal plan roundup! If you love food, meal planning, and exploring new flavors, you’re in the right place. As someone who practices One Meal a Day (OMAD) intermittent fasting, I focus on creating meals that are satisfying, full of variety, and something to look forward to every day.
This week, both ALDI and Meijer had so many items out of stock — which made meal planning a little more challenging than usual. But with a few pantry staples, a flexible mindset, and some leftovers from last week, I pulled together a delicious lineup. Plus, I get a bit of a break from the kitchen on Saturday — a well-earned Mother’s Day treat for this busy mama!
This Week’s Meals
Monday:
Leftovers from last week’s meal: Greek Chicken Tenders Baked, Mashed Potatoes, Roasted Carrots, Boiled Corn on the Cob (no recipe needed — just boil and slather with butter, salt, and pepper!), and Rhodes Rolls.
Tuesday:
Sloppy Joes on brioche rolls (thanks, ALDI!), boxed potatoes (an ALDI shelf-stable find), and more buttery Boiled Corn on the Cob.
Wednesday:
Birria Beef served as tacos or nachos. You can keep it simple with cheese or add black beans. On the side: Rice Cooker Beans and Rice and sliced bell peppers.
Thursday:
Charcuterie night with ALDI German Pretzels! No cooking required — just our favorite meats, cheeses, fruits, and snacks. Get an idea of how we do charcuterie nights in this YouTube video.
Friday:
Leftovers from Wednesday’s Birria Beef — it makes a ton! If there’s still more left after tonight, I’ll freeze it.
Saturday:
Heading to The Cheesecake Factory — my pick for Mother’s Day! No cooking for me today 🙌
Sunday:
Visiting moms and grandma, so I’ll be playing it by ear. I might grab something from the freezer or pantry, depending on how the day unfolds.
Where I Shop
I kick off each week with my Monday ALDI shopping trip, where I find incredible deals on staples and seasonal items. ALDI is my go-to for most of my groceries, but I also shop at Meijer (even though it let me down a bit this week), Walmart, Costco, Trader Joe’s, and occasionally use subscription food companies to mix things up. The variety helps keep my meals exciting and fresh — even when the shelves are bare!
