Welcome back to my weekly meal plan roundup! If you love food, meal planning, and exploring new flavors, you’re in the right place. As someone who practices One Meal a Day (OMAD) intermittent fasting, I focus on creating meals that are satisfying, full of variety, and something to look forward to every day.
This week is a busy one — basketball practices are starting, we’ve got a night at the local aviation school, and a family dinner at Matt’s parents’ house. Plus, I’m sneaking in a fun Friday night at a local art show hosted inside a gourmet popcorn shop (yes, please!). Even with the full schedule, this week’s menu is filled with easy, cozy favorites that make dinnertime simple but special.

🍽️ This Week’s Meals
Here’s what’s on our menu this week:
Monday:
Breakfast Sandwiches (recipe inspiration) – made with English muffins or bagels and whatever toppings sound good! I like to add some greens and a flavorful sauce for a fresh twist.
Breakfast Potatoes (recipe here)
Homemade Applesauce (YouTube recipe)
Tuesday:
Baked Potato Soup (recipe here)
Crusty Bread (overnight bread recipe)
I’m also prepping an easy Vegetable Soup to have on hand for lunches or a quick dinner later in the week. It’s one of my favorite “set it and forget it” slow cooker meals:
- 1 bag Frozen California Blend
- 1 bag Frozen Mixed Veggies
- 1 (28 oz) Can of Diced Tomatoes
- 1 carton Beef or Vegetable Stock
- 2 cans Tomato Sauce
- 1 tbsp Italian Seasoning
- Salt (1 tsp), Pepper (2 tsp), Garlic Powder (1 tsp), Onion Powder (1 tsp), Minced Onion (2 tsp)
Combine everything in the slow cooker and let it go for 7–9 hours. I love prepping it the night before and starting it in the morning—it’s perfect for busy days. The Crusty Bread dough can be made the night before too!
Wednesday:
Soup again! Leftovers are always better the second day, and this one gets even more flavorful.
Thursday:
Steak on the Blackstone
Parmesan Fries (recipe here)
Roasted Brussels Sprouts (recipe here)
Friday:
Carry-Out Pizza and Salad – I’ll be heading to the Art Show at the popcorn store, so this is an easy dinner night for the family.
Saturday:
Family Dinner at Matt’s Parents’ House – no clue what’s on the menu, but I’m not cooking, so that’s a win!
Sunday:
Butter Chicken (video for complete meal)

- Cider Fall Drink (Facebook reel) – Elsie and I both look forward to this one every fall!
- Cherry Fluff (recipe here) – sweet, creamy, and nostalgic.
🛒 Where I Shop
ALDI is my favorite store and where I try to buy most of my ingredients each week. I usually round out what I need at Meijer, and occasionally pop into Costco, Sam’s Club, Target, or Trader Joe’s for specialty finds.
