Quick and Cozy Dinners + an Early ALDI Thanksgiving Feast 🍂

Welcome back to my weekly meal plan roundup! This week is one of those busy mom weeks — with Kel having a field trip every day and me volunteering at school — so I’m all about quick, cozy dinners that don’t skimp on flavor. Plus, I’m extra excited because I recently shared my ALDI Thanksgiving Haul, and I’ll be putting it to good use for an early holiday feast later in the week!

If you love food, meal planning, and exploring new flavors — and especially if you practice One Meal a Day (OMAD) like I do — you’ll find plenty of delicious ideas here. These meals are satisfying, simple, and full of variety… the perfect combination for a joyful week of eating.


This Week’s Meals

Here’s a peek at what’s cooking this week in our house:

Monday:
Crunchwraps! No official recipe for this one, but I use frozen taco meat, shells, and toppings to build homemade crunchwraps similar to Taco Bell. The fun part? Everyone customizes theirs just how they like it!

Tuesday:
Annie’s Mac & Cheese and Hot Dogs – Sometimes simple is exactly what we need, especially when I’m volunteering all day. My husband actually ordered his favorite Annie’s Mac & Cheese on Amazon so we’re fully stocked for quick dinners like this!

Wednesday:
Vegetarian Lasagna Soup served with Crusty Bread — I’ve made plenty of traditional lasagna soup recipes before, but this will be my first time trying a vegetarian version! I can’t wait to see how it turns out — it looks so cozy and full of flavor.

Thursday:
Early Thanksgiving Dinner! Using everything from my ALDI Thanksgiving Haul, I’m putting together a pre-holiday meal to enjoy all the festive flavors a little early. I’m still deciding on exact recipes, but the table will definitely be full of seasonal favorites!

Friday:
Carryout Pizza and Salad — our Friday night favorite! A perfect end to a full week of field trips, volunteering, and early holiday fun.

Saturday:
Mom (that’s me!) is away with my sister — so it’s a Dad’s Choice dinner night. We’ll see what Matt comes up with! ????

Sunday:
Old Fashioned Noodle Soup (if I can find salt pork) with Crusty Bread. This one is a family classic — simple, hearty, and made with love.


Old Fashioned Noodle Soup Recipe

This is one of our family’s most comforting recipes — the kind of meal that fills the house with warmth.

Ingredients:

  • 1 large white onion, diced
  • 12 oz salt pork
  • 7–8 large russet potatoes, diced
  • 8 cups water (6 to begin, 2 later)
  • Pepper and salt, to taste

Instructions:
Brown the diced salt pork, then add the onion and sauté together. Once the onions turn translucent, add 6 cups of water and the potatoes. Heavily pepper to taste, and let simmer for an hour or two (I love making this in the morning so it can go low and slow).

After simmering, bring it back to a boil and prepare your noodles:

Noodles:

  • 2½ cups all-purpose flour
  • 3 large eggs

Pulse together in a food processor, adding water slowly until the dough is pliable. Roll out on a floured surface, cut into your preferred sizes, and drop into the boiling soup. Boil briefly, then reduce to simmer until ready to eat. Salt at the end (about ½–1 tsp).


Where I Shop

I buy most of my groceries at ALDI — it’s truly my favorite store — and I round out what I need at Meijer. I also love popping into Costco, Sam’s Club, Target, and Trader Joe’s for special finds.
