Weekly Meal Plan: Birthday Celebrations & Cozy Comfort Foods

Welcome back to my weekly meal plan roundup! This week feels extra special because we’re celebrating Matt’s birthday on Monday. Around here, birthdays mean the birthday boy gets to pick dinner—and of course, there’s cake (from Meijer) and his favorite vanilla ice cream. The rest of the week is filled with cozy comfort foods, from warm waffles to cheesy soups, perfect for this season. As always, I build my meal plans with OMAD in mind, so every meal is satisfying, balanced, and worth the wait.

This Week’s Meals

Here’s a sneak peek at what’s on the menu this week:

Carry-Out – Matt’s (birthday boy) choice

Tuesday
Waffles (we often add cinnamon chips, chocolate chips, or diced apples)
Potato hashbrowns, bacon, eggs on the side

Wednesday
Fettucini Alfredo
Chicken breast (seasoned and pan-fried in avocado oil)
Roasted carrots

Thursday
Grilled cheese sandwiches
Bean salad
Chips

Friday
Pizza (carry-out) + side salad — Friday favorite 🍕

Saturday
Two soups:

Vegetable Soup Ingredients

  • Frozen California Blend
  • Frozen Mixed Veggies
  • 1 can diced tomatoes (28 oz)
  • 1 carton beef stock (or vegetable)
  • 2 cans tomato sauce
  • Italian seasoning (1 tbsp +/-)
  • Salt (1 tsp +/-)
  • Pepper (2 tsp +/-)
  • Garlic powder (1 tsp +/-)
  • Onion powder (1 tsp +/-)
  • Minced onion (2 tsp +/-)

Combine all soup ingredients and slow cook for 7–9 hours. I usually prep the night before, set it in the morning, and let it go all day. SO EASY! Pair it with crusty bread or soft pretzels.

Sunday
Soup day, round two — we always double up on Saturday so we can enjoy it again Sunday with minimal effort.


Where I Shop

I do most of my grocery shopping at ALDI (my favorite store!) and round out what I need at Meijer. Sometimes I also pop into Costco, Sam’s Club, Target, or Trader Joe’s for fun finds and extras.
