Welcome back to my weekly meal plan roundup! This week is a little special—we’re sandwiched between two vacations. We just got back from an unforgettable NYC trip, and we’re heading to Disney next week! So, this week’s meals are all homemade, focused on ease, flavor, and using what we already have on hand. If you’re new here, I follow an OMAD (One Meal a Day) intermittent fasting lifestyle, and I love building meals that feel satisfying, joyful, and never restrictive.
This Week’s Meal Plan is full of fun spins on family favorites, cozy comfort meals, and end-of-summer bites that make the most of our time at home.
This Week’s Meals
Here’s a sneak peek at what we’re enjoying:
Prepped Monday and available all week:
- Cut watermelon
- Three Bean Salad (Note: I double the recipe and add one extra can of chickpeas for even more goodness.)
Monday: Breakfast-for-Dinner Night
Using leftover Pumpkin Pancakes from a few weeks ago (frozen and just as good), topped with freshly made Pecan Praline Sauce.
Served with crispy bacon and Seasoned Breakfast Potatoes for the ultimate comfort plate.
Tuesday: Chickpea Noodle Soup
Mila (my oldest) is taking over the kitchen to make her version of chickpea noodle soup — like a vegetarian spin on chicken noodle. The recipe she’s using is from a cookbook, but this similar version is a good match!
Served with Italian bread for dunking.
Wednesday: Spaghetti Bake Night
We’re doing a fun new twist on our usual spaghetti with this Spaghetti Bake.
On the side, we’re having Garlic Parmesan Pull Apart Bread and steamed edamame for a bit of green.
Thursday: Quesadilla Bar
Using up leftover tortillas with a choose-your-own filling vibe — cheese and shredded chicken are on deck.
Plus, I’ll be sautéing Fajita Veggies to serve on the side or tucked inside.
Chips and salsa round it all out.
Friday: Make-Your-Own Stromboli
No formal recipe, but here’s the plan: roll out premade dough and layer on fillings.
One will be mozzarella & basil, another pepperoni & banana peppers.
We’ll brush the tops with egg wash, season with Italian herbs, garlic salt, and parmesan, and slice the tops before baking.

Served with big salads.
Saturday: Steak & Loaded Baked Potato Night
Matt is grilling steak on the Blackstone (no recipe, just trust the process 😉).
I’ll make baked potatoes with a full topping bar:
Salsa con queso, shredded cheese, bacon bits (leftover from Monday!), steamed broccoli, sour cream, black pepper.
Build-your-own at its finest.
Sunday: Fend-for-Yourself + Leftovers
No plan here — just enjoying whatever’s left in the fridge or making simple plates to use things up before we hit the road again.
Bonus Baking (maybe!):
Kel might attempt Cinnamon Crusty Bread this week… if the baking mood strikes. Fingers crossed!
Where I Shop
Each Monday, I start the week with a grocery haul from ALDI — my go-to for affordable staples and fun seasonal items. I also mix in trips to Walmart, Costco, and Trader Joe’s depending on what’s on the menu. If you want a peek into this week’s haul, check out my latest video:
