Welcome back to my weekly meal plan roundup! This week is a little different because I’m only cooking for two days before we head out early Wednesday morning for our trip to Disney! 🏰✨ That means Monday and Tuesday are all about easy, satisfying, and fun meals that will carry us right into vacation mode. And honestly—do you think I can make it to an Orlando ALDI while we’re there? I might just have to try!

As someone who practices One Meal a Day (OMAD) intermittent fasting, I focus on creating meals that are filling, flavorful, and worth looking forward to every day. Here’s what’s on the table this week before the magic begins.
This Week’s Meals
Monday:
Stromboli – I’m using premade dough this week for a shortcut, but the method is the same. Roll out each dough and cover with your fillings/toppings of choice. We’ll likely do a mozzarella & basil version and another with pepperoni and banana peppers. Roll it up, brush with egg wash, season the top (I love Italian seasoning, garlic salt, and Parmesan), make a few slits, and bake according to the dough package directions. Serve with a fresh side salad.
Tuesday:
One Pot Pasta with salad and the new Asiago ciabatta rolls from ALDI. This pasta is a longtime favorite—quick to make, minimal dishes, and full of flavor. The rolls are a fun, bakery-fresh addition I couldn’t resist.
Wednesday–Sunday:
Disney! I can’t wait to see the parks, enjoy the treats, and soak up every magical moment.
Where I Shop
This week’s plan is short and sweet because we’ll be away most of the week. Monday’s Stromboli is a carry-over meal from last week, while Tuesday’s One Pot Pasta is an easy favorite that pairs perfectly with the bakery-style Asiago rolls from ALDI.
