Welcome back to another weekly meal plan roundup! This week is extra special in our house—my son turns 9 🎉 and, as always, birthdays mean yummy food and simple traditions we love. It’s also the first full week of school, which means I’m leaning on meals that feel cozy and fun for our family. On top of that, I’m personally kicking off the week with a 3-day fast (until Wednesday afternoon), so you’ll see how our meals flow right into the celebration!
If you’re new here, hi! I’m Jackie, and I practice One Meal a Day (OMAD) intermittent fasting. My goal is to make that one meal satisfying, joyful, and filled with variety. Here’s what’s on our menu this week:
This Week’s Meals
Monday:
Double Soup Night! I’m making a big batch of Chicken Noodle Soup (I don’t really measure, but this recipe is very similar—plus, we add full peppercorns for extra flavor) and Black Bean Soup (I always use extra beans and swap in green peppers instead of red). We’ll enjoy both soups with Italian bread, butter, cheese, and plenty of salad fixin’s.
Tuesday:
Leftover soups—because soup night always makes enough for another round, and that’s exactly what I need while finishing up my fast.
Wednesday:
Butter Chicken with rice and naan. This is one of my absolute favorites, and I’ll be breaking my fast just in time to enjoy it.
Thursday:
My son’s 9th birthday! 🥳 His request is classic: Hungry Howie’s pizza at the park, with fresh broccoli on the side. We’ve been doing “pizza and park” for years now, and it’s a tradition I truly look forward to every September.
Friday:
Dinner out at Olive Garden! Their Never-Ending Pasta Bowl is back, and since we have a gift card, it’s the perfect family night out after a busy school week.
Saturday:
Spaghetti, Texas Toast, and salads—plus cupcakes to share at a friend’s house for a fun get-together (kind of a non-party birthday celebration).
Sunday:
Leftovers day! My favorite way to wrap up the week with a mish-mash of the delicious meals we’ve already enjoyed.
Where I Shop
As always, most of my ingredients come from ALDI, which is my favorite store for both staples and fun seasonal finds. I usually round things out at Meijer, and sometimes I’ll pop into Costco, Sam’s Club, Target, or Trader Joe’s if I need extras.
